Pesto

Sorry, I forgot to take a picture. This is a recipe I got from a lady in my ward who invited me over for dinner. I finally tried it for my first time and was very pleased. If you want to make real Italian pesto then they say it's makes a difference if you chop it all by hand instead of using a blender, but I take the lazy method knowing it's much better then dried pesto you buy at the store.



Combine in a blender:

1 cup firmly packed spinach leaves (still wet from rinsing)
1 cup firmly packed basil leaves (still wet from rinsing)
1/3 cup olive oil
3 Tbsp. pine nuts
¼ cup parmesan
1 large clove garlic, minced

Blend until well mixed.
Serve over noodles
