Carmel Apple Cake

Since I'm on a Fall Foods kick, here's one more. I love to make this cake for any occassion. It's fun, easy and unexpected, and reminds everyone of carmel apples which we love to eat at this time of year.


Carmel Apple Cake
1 pkg. yellow butter cake mix
1 pkg. (4 serving size) vanilla pudding
1 cup water
4 eggs
1/3 cup vegetable oil
3 Granny Smith apples, peeled, coarsely chopped
30 candy caramels, unwrapped
6 tbsp. milk

Preheat oven to 350. Grease and flour a bundt pan. Beat cake mix, dry pudding mix, water, eggs and oil in a large bowl. Beat for 2 minutes. Pour 2/3 of mixture into bundt. Gently fold apple chunks into remaining mixture. Pour into pan. Bake for 50 minutes. Remove from pan immediately and transfer to wire rack. Allow cake to cool for 15 minutes. Melt caramels and milk, either on stove top or in microwave. Cool 5 minutes until slightly thickened. Drizzle over cake, allowing caramels to seep into the cake.
