These are some of my favorite recipes. We usually half it since its Brandon and I or invite others over but we eat it for the whole week and love it.
Pork Barbacoa-sweet and spicy shredded pork
Ingredients

pork loin 6-8 lbs
2 cans-tomato sauce (8 oz. can)
2 cups brown sugar
2 cans-El pato mexican red sauce (yellow can - 8 oz)
1 T. cumin
1/2 tsp minced garlic or one fresh clove
1/2 tsp salt
1/2 tsp pepper

Directions
place pork loin in a large crock pot with cumin,garlic, salt, pepper, and enough water to cover the pork.(You can cut the pork into large chunks to make it fit if neccesary.) Cover and cook on low for 8-10 hours (For faster cooking cover and cook on high for 5-6 hours)Drain liquid from the pork and shreadAdd the brown sugar, tomato sauce, and El Pato sauce. Mix well. Add a little water if needed.Cover and cook on high for 1 1/2-2 hours to concentrate flavors. Stir occasionally.
Serve

Garnish with Cilantro,chopped Cabbage,juice from a lime,and fresh salsa.
Southwest Mexican Rice
Ingredients
3 cups rice
3 cups water
4 tsp chicken boulion
4 tsp minced garlic
3/4 tsp salt
1 T butter
1/2 onion
1/2 bunch of cilantro
1 can of green chiles (4 oz)
Directions
Bring water to boil
Add chicken boulion,salt, butter and garlic to boiling water
Blend the cilantro, green chiles, and onion in a food processor
Add blended ingredients and rice to the boiling water.
Cover and simmer for 20-30 minutes until the rice is soft.
Fresh Salsa
Ingredients
5 roma tomatoes
1/2 sm onion
1/3 bunch cilantro
1 tsp minced garlic or 2 cloves fresh garlic
1/2 anaheim pepper
1/4 fresh jalapeno (if you want it hot)
1/2 tsp black pepper
1 tsp salt
2 T red wine vinegar
1/2 can crushed tomatoes
Directions combine tomatoes,onion,cilantro,garlic,and anaheim pepper in a food process or chop until the tomatoes are in small chunks (don't puree the mixture)Put Mixture into a bowl
add salt,pepper,vinegar,and crushed tomatoesMix wellTaste and add more salt, pepper,or vinegar if needed to your liking
