Home Made Creamy Tomatoe Soup


I kind of stumbled across this recipe when I was trying to make something else. I think I've finally perfected it and am proud to say that it tastes very similar to my favorite tomatoe soup from the "Soup Kitchen." Perfect for a cold winter day with warm rolls.

Creamy Tomatoe Soup

2 garlic cloves, minced
1 can stewed tomatoes
1 small can tomatoe paste
2 Tbsp. fresh basil (or 1/2 Tbsp. dried basil)
1 pint heavy whipping cream
1/2 c. fresh parmesan cheese (or 1/4 c. dried parmesan cheese)
1/2 medium onion, chopped (small)
water as needed

Saute onions in oil on medium heat. Add all ingredients in crock pot including cooked onions. Cook on low heat for 4 hours or so. Serve with fresh rolls or breadsticks. Makes 4 Servings.
