Marshmallow Brownies

Every family has a few unconventional dishes that make their way onto the Thanksgiving feast menu. And in the Alba family, one of those dishes makes it's debut at dessert time: Marshmallow Brownies. My Aunt Mary makes them for every occasion, including Thanksgiving. It's actually my mom's recipe that she shared years ago, and my Aunt Mary has since claimed them as her own. Anyway, these are truly spectacular brownies for any occasion:

Marshmallow Brownies

Cream together:
1 cup butter
1/3 cup cocoa + 2 Tbsp2 cups sugar

Fold in:
4 eggs (beat well after each egg)
2 tsp vanilla

Add:
1 ½ cup flour
1 tsp salt
1 ½ cup walnuts

Batter will be very thick. Spread in a 9 x 13 cake pan. Bake at 350 degrees for 25 minutes. Remove from oven and cover with mini-marshmallows 1 deep and return to the oven until golden brown – watch closely because it happens quickly. Remove from oven and allow to cool for 1 hour before frosting.

Frosting:
½ cup butter
1 2/3 cup powder sugar
1/3 cup canned milk
1/3 cup cocoa

Mix together until fluffy. Keep adding powder sugar until you achieve the right consistency. Frost and let stand overnight.

I made these for a work party last week and everyone wanted the recipe. These really are delicious!
