French Dip Sandwiches

French Dip Sandwiches

1 (4-6 pound) roast
½ pkg. au jus mix
½ pkg. dry onion soup mix
1 (10 oz) can beef broth
1 cup water
1/8 cup onion slices
1 loaf French bread
Swiss cheese slices
Mustard (optional)

Salt and pepper roast while bringing it to room temperature. Place meat in a pan and brown on stove top. Meanwhile, mix au jus and onion soup mix with beef broth and water in crock pot. Add a beef bullion cube and more water if desired. Stir. Place roast in crock pot and adjust timing as desired. (Remember that crock pots often cook fast so check roast about 45 minutes before serving, since it might be finished early.) Remove roast and either slice or shred it. Pour a bit of au jus over meat. Pour remaining au jus into individual cups for dipping. Serve on toasted French bread with mustard and Swiss cheese.
