Mushroom Risotto


I'm usually not a big mushroom fan, but this was very good. Again, another cheap and simple meal.

-2 Tbsp butter
-1/2 tsp dried thyme
-10 oz button mushrooms, trimmed and quartered
-salt and pepper
-1 cup rice
-1 can (14.5 oz.) of chicken broth (or 2 cups of water with chicken bullion)
-3 garlic cloves sliced
-1/4 cup grated Parmesan

Saute garlic and mushrooms in melted butter.
Cook rice and chicken broth in a seperate pot.
Combine everything and sprinkle Parmesan on top.

(I like to add some cherry tomatoes at the end until they are just warm)
