Pumpkin Pie Cake

from the Keeping Up Cookbook by Ivorys pg. 205

Pumpkin Pie Cake
1/2 cup sugar
1 1/4 cups sugar
2 eggs
1 cup pumpkin puree
1/2 teasp. ginger
1/2 teasp. nutmeg
1/2 teasp. cinnamon
1/2 teasp. baking soda
2 teasp. baking powder
1/2 teasp. salt
2 1/2 cups flour
3/4 cup milk

whipped cream, for serving

Cream together shortening and sugar. Add eggs, then remaining ingredients, beating in flour and milk last. Mix well. Pour into a greased 9x13 pan. Bake at 350 degrees for 30-35 min. Cool, slice and serve wih a dollop of whipped cream.

So so great - and I just made this and it was a huge hit. I can eat pumpkin year round:)

How do you like that cookbook? Their other cookbook, Favorites, is one of my favorites so I'm guessing this one is awesome, too. Is it worth adding to my collection?
